Reducing Child Malnutrition with healthy meals
Malnourishment is a silent killer that does not spare even the lives of little children. It is one of the major causes of death of children under the age of five.
Malnutrition is the cause of death of close to half the children in Asia and Africa below five years.
Insufficient nutrition increases susceptibility to various infections and leads to delayed recovery. Three important factors that estimate malnourishment are stunting (low height with respect to age), wasting (low weight for height) and underweight (low weight for age).
Malnourishment in childhood reduces the quality of
adulthood
The first 1000 days of a
child’s life decide if the child is more likely to be healthy or suffer from
malnutrition. This means to say that, poor nutrition of a mother during her
pregnancy could lead to a stunted childhood. These stunted children tend to be
shorter and weaker. They often have impaired mental development and also tend
to perform low in school making them more likely to take up low-payment jobs.
Hence, they are unable to provide for their children.
Thus it is imperative to work towards nourishing the present generation of children so that they can contribute directly to the health of the next one.
According to the World Bank, close to 1/3rd of stunted children (below 5 years), live in India.
PM POSHAN Abhiyaan (earlier
known as the MidDay Meal Scheme) is one intervention that could reduce
these numbers drastically.
Let us take the example of person ‘X’ from a
low-income family. He is a daily-wage worker whose salary or savings is not
enough to take care of his wife and children. To become a helping hand to the
family’s financial situation, he sends his child to work so that he can get
some more money for the family’s food. He does not give a choice to his child
to choose.
Now, let’s think of another situation where ‘Y’ is a
daily-wage worker who is struggling to make ends meet to feed his family of
three (along with his wife and child). They are aware of the Government’s MDM
scheme and send their child to a nearby Government school with the thought that
at least the child will be able to enjoy one proper, wholesome meal once a day.
By doing so, they are playing a major role in the child’s education too. These
school meals become a reason for the child to attend school without missing
even a single day.
This is the power of school
meals.
Midday meals (MDM) served as a part of this programme not only give an incentive for parents to send their children to school but also become a reason for children to get educated for the long term.
Providing nutrition; food for children
Mid-day meals become a source
of nutrition in children. They help in their physical and cognitive
development. How?
Here’s how:
- School meals take
care of all the essential nutritional requirements of a child. It helps the
child develop in a healthy manner. These meals provided as a part of the PM POSHAN
Abhiyaan, take care of carbohydrates, essential fats, proteins, fortified
salt, etc.
- Meals nourish
children inside-out, providing them with the right energy to expend it by
participating in various sports and co-curricular activities. A well-nourished
child can play well when compared to a malnourished child.
- It reduces risk the
of diseases providing good immunity. Meals prevent diseases like anaemia,
partial blindness and give them the strength to fight common diseases like
cold, flu, etc.
- Free school meals give them access to education. When children start coming to school on a regular basis, they also get tuned to receiving education on a daily basis.

This September, Stand Against Hunger
We are lucky!
We get to choose what we want
to eat and when.
But, for individuals coming
from families where being hungry and not getting food is a norm, they must
decide whether they can afford to eat or not.
For such people, it is a tough
choice to make between, food, electricity, water, medicine, education and other
needs.

The whole month of September is celebrated as Hunger Action Month, where people across the world come together to support a movement to end hunger in all forms. With public and Government support, we can achieve unachievable tasks like helping these disadvantaged communities achieve long-term security so that they don’t have to choose between food and other things.
Feed to defeat hunger and all its forms
Over 828 million people suffer
from various forms of hunger. Food is a human right, but, does every individual
have the access to good food? The answer is NO! They suffer from hunger in
either of the levels detailed below:
Acute
Hunger
Acute hunger is a condition when a person is
undernourished over a definable. This is an extreme form of hunger that arises
during crises like the pandemic, wars, disasters, etc. This form of hunger
generally affects people who already suffer from chronic hunger.
Chronic
Hunger
Chronic hunger is a state of long-term
undernourishment. This form of hunger is generally associated with a lack of
sufficient funds for healthy and clean food along with water and/or healthcare.
This form of hunger is not condition-specific but is the most widespread form
of hunger across the globe as it is linked with poverty.
Hidden
Hunger
Hidden hunger is a form of chronic hunger that is a result of an unbalanced diet, where important nutrients like zinc, iron, iodine and vitamins are not present in the food consumed. Initially, these findings are not visible at first glance, however, over a long period, these nutrient deficiencies lead to long-term illnesses.

PM Narendra Modi Inaugurates Akshaya Patra’s 62nd kitchen in Varanasi

Government’s intervention to feed children
NITI Aayog has identified certain districts of India with a high level of malnutrition. To support children in these areas and all over the nation, the Government of India started the PM Poshan Abhiyaan which was earlier known as the Mid-Day Meal Programme.
It was mandated in 2001 that every child studying in Government, Government-aided schools and Education Guarantee Scheme centres receive school meals as a part of this programme. The name of this Mid-Day Meal Scheme was changed to Pradhan Mantri Poshan Shakti Nirman Scheme (PM POSHAN Abhiyaan) in September 2021. This programme has shown positive effects.
Parents who were not able to afford sending their child/ren to schools due to their financial constraints eagerly sent their children for the free nutritious food being supplied.

The Akshaya Patra Foundation is an NGO in India that is the implementer of the PM POSHAN scheme (formerly known as the Mid-Day Meal Programme) that benefits 1.8 million children studying in Government and Government-aided schools in 14 states and 2 union territories of India. Akshaya Patra inaugurates 62nd kitchen
On 7 July 2022, the Honourable Prime Minister of India, Shri Narendra Modi inaugurated The Akshaya Patra Foundation’s new kitchen in Varanasi, Uttar Pradesh. This is the fifth centralised kitchen in the state after Lucknow, Vrindavan, Gorakhpur and Mant.
Honourable Governor, Smt Anandiben Patel and Honourable Chief Minister, Shri Yogi Adityanath accompanied the Prime Minister. This kitchen was supported by Westbridge Capital. The event was presided by Shri Madhu Pandit Dasa, Chairman – Akshaya Patra, and Shri Chanchalapathi Dasa, Vice-Chairman.
This event was followed by a visit to the newest kitchen. The Prime Minister, Chief Minister and Governor along with other dignitaries were given a tour of the Akshaya Patra kitchen.

Assam flood relief works help rebuild lives
Since the lashing of rains and overflowing of the Brahmaputra river and its tributaries, Assam suffered day after day and it seemed never-ending.
It always starts as the rivers
start gushing down carrying the silt as a result of the melting glaciers. Added
to the heavy monsoons and the melting glaciers, the river volumes enhance and
pick up intensity downstream, resulting in floods.
This is the case every year.
However, it is said that Assam is facing the worst-flood scenario in the
last decade.
With hundreds of deaths and lakhs of affected people, the situation seems grimmer by the day. Thousands of them have become homeless and are staying in relief camps battling hunger, shortage of essential supplies and recurring landslides.
Indians from all walks of life have come forward to lend their support to the flood victims.
I was devastated seeing the water levels when we were on the way to provide food as a part of the Assam flood relief works. I freaked out when I realised that almost half of the tractor wheels were submerged; it was like we were floating. We were all geared to brace for the rain and floods, but the local people were not equipped.
Men braved through the waters even though it was waist-deep.
So many questions popped into my mind.
What if they slip and fall?
How and where will they sleep?
Where will they stay?
How will they fight water-borne diseases?
How will they recover from their losses?
How will they remark their land?
If their house is submerged, what about their
means of food?...
I had to stop my mind from thinking further.
As I got off the tractor, I figured that ours
was not the only NGO in India who has arrived for support, there were so
many others.
As one positive aspect, I was happy to see that there are so many generous people who donate to feed the needy during times of disaster. When we have each other, we can face and battle any disaster.
The Akshaya Patra Foundation is an NGO in India that provides food assistance to flood victims. I am glad I was able to reach out to people in distress by being associated with this Foundation. With the generosity of many individuals, corporate donors and partnerships with various Governments, we were able to serve freshly cooked meals to these victims.
What we provided as meals
In these flood-affected areas of Kamrup district
(Rukminigaon and Hatigaon areas), we served any one of the following options:

- Plain/ vegetable khichdi
Today’s scenario
As the water levels have started to recede, flood victims have started to rebuild their lives and homes. They have been trying to cope with their lives and food should be the last thing on their mind.

Mid Day Meals: a Bridge to Abundant Futures of Children
Early childhood is the period of rapid growth and development of a child’s mind and body. Thus, childhood nutrition lays the foundation for motor, cognitive, social and emotional skills for their entire lives. It ensures strong immunity against infections, proper brain development, healthy growth of vital organs and improvement in children’s physical and cognitive activity.
Why mid day meals?
Ensuring children receive proper nutrition is not an easy task. A child must be served various nutrients balanced by type and proportion.
Additionally, children from underprivileged families are the most vulnerable to life-threatening illnesses due to lack of awareness about such nutritional requirements. As a result, frequent exposure to diseases forces millions of children in India to skip and even quit school altogether.
This is why Akshaya Patra, an NGO in India,
began its work in 2000 to tackle classroom hunger by providing adequate
nourishment to strengthen their immunity. What started by feeding 1,500
children is now running the world’s largest NGO-run school lunch programme. Presently,
Akshaya Patra serves mid-day meals (MDM) to 1.8 million children across 14
states and 2 union territories every single day!
How
does Akshaya Patra contribute to child development?
Ever since Akshaya Patra started supporting the Indian Government in implementing the mid-day meal (MDM) programme, it has been conducting thorough research to provide the best food for the nation’s leaders of tomorrow.
Conclusively, the NGO in India began following
nutritional guidelines declared by the Supreme Court of India and the Ministry
of Education (previously known as the Ministry of Human Resource Development)
for preparing school meals.
Guidelines by the Supreme Court of India
- Every child must get a
minimum of 300 calories and 8-12 grams of protein per day
- Adequate nutrition must be provided on all school days for a minimum of 200 days
Guidelines by the Ministry of Education
- Every meal must contain
carbohydrates, proteins, and micronutrients such as iron, folic acid,
Vitamin A etc.
- Primary school children must receive at least 450 calories with 12 grams of protein, while upper primary and secondary school children must receive 700 calories with 20 grams of protein
How do mid day meals determine children’s future?
When the nutritional requirements are met efficiently, a child’s body builds strength and stamina to deal with all the odds with perseverance. This will enable children—especially those from challenging backgrounds—to work hard, surpass their socioeconomic boundaries and escape the vicious cycle of poverty.
Here’s the story of Roshini, a mid-day meal beneficiary
from Odisha, who lost a majority of her childhood worrying and getting bullied
because of a white patch on her skin. She grew anxious thinking it may spread
all over her body and even stopped eating, assuming the white patch may spread
faster because of an ingredient that she could be unaware of.
However, once she was introduced to the internet by a school friend, it cleared all her misconceptions. She further explored the online world and decided to become a cosmetic surgeon to help people like her.
During her research, Roshini also found out about Akshaya Patra and its hygienic processes for cooking school meals. Hence, she no longer hesitated to relish safe and fulfilling meals at her school that come from the same Foundation.
Education and resources at school helped Roshini look at the world from a new perspective. Millions of children like Roshini come to school for nutritious meals and such enlightening experiences to establish a purpose for their lives. This is where Akshaya Patra steps in; it serves food to Government and Government-aided schools and fuels the dreams of children from challenging backgrounds.

What does it take to deliver a hygienic midday meal
I snoozed my alarm. I was still so sleepy and tired. It
was probably the medicines that showed its effect on my body. I was still
recovering from the last week’s fall at home.
Today is the first day I went after this incident.
So I decided to wake up even before the next alarm went
off.
There was a sharp shooting pain in my left leg. I found
it difficult to move from one place to another; walking to the bathroom took me
a good 5 minutes. I was worried about how I will perform in the kitchen today.
I got dressed up and was ready to leave home by 4.30 in the morning. I do not fear contracting the virus, I am not worried because my company – The Akshaya Patra Foundation ensured my safety by arranging vaccination for all its employees.
I reached the kitchen premise.
And my drill began.
I stood in line to get my temperature checked.
One of my colleagues had a slightly higher temperature
than what was accepted, so he was asked to go back home.
It was my turn; the security guy checked my temperature.
He asked me how I was doing. I didn’t know even the security guy knew about the
accident.
I moved ahead to sanitise my hand.
Everyone was smiling and asking about me, I felt like a celebrity!
I tied my hair into a bun and put on the headgear. We all
were asked to do this every day without fail because this was a midday meal NGO, and hygiene is of
utmost priority here. Whether employees work in a centralised kitchen or a decentralised kitchen, headgear, masks and
gloves are compulsory. After I was geared up with the head cap, I went ahead to
wash my hands.
As I was washing my hands with soap and humming a song,
Thaayamma joined me. I missed her! She reminds me of my deceased aunt.
Thaayamma: Yenamma Sridevi! How are you feeling now?
Me: I am fine akka. I just find it difficult to walk and
sit these days.
Thaayamma: Oh is it? Maybe we can talk to the Supervisor
to give you a chair for a few days.
Me: Is that possible? It’s never happened before.
Thaayamma: Don’t
worry! Ours is a centralised kitchen,
I am sure we can find a chair for you to work on.
She went out of her way to take permission from the
Supervisor and help me sit on a chair for me to work on.
I love my job here at Akshaya Patra! Every individual is respected and
taken care of.
Everyone was so welcoming; like I had come back from a
long weekend. It makes me so happy to come here every single day.
I stretched my hands as I was going to begin work after a
long gap of 4 days. My task for today was cutting Mangaluru cucumbers, while
Thaayamma was assigned carrots, Sarita with drumsticks and the rest beans,
onions and tomatoes. The menu for today was Krishnamruth sambar with steamed
rice.
The cook was shouting around asking all of us to hurry
up, else Akshaya Patra – a midday meal
NGO would be late to serve midday meals to children. As the rice was being
steamed and the supervisor was checking on the seasoning ingredients, we had
visitors in the kitchen. I heard from others that they had contributed earlier,
and wanted to donate online this
year too, but wanted to check on the quality and hygiene of the centralised kitchen. I glanced around
the room, the visitor was a woman.
The visitor was not wearing a head cap. We were not so
worried but could not deny the fact that even a strand of hair in the kitchen
would raise a red flag. The supervisor came forward and politely handed over
the head cap to her which she obliged.
It was a relief!
One helper was assigned to wash the vegetables in flowing
water, twice. He then moved all the cleaned and washed chopping boards, knives
and utensils to all of us.
Can you imagine washing hundreds of kilos of
rice, dals and other legumes every day?
For cooking this sambar for around 5000 primary children
coming from poor sections of society, we use close to 115kgs of different types
of dals. As I was lost in doing my work in a rhythmic manner along with others,
we cut close to 150kgs of vegetables; I forgot about my pain. After almost an
hour of cutting and chopping, we all were finally done for the day.
It was almost 5.45 in the morning. I could smell the dals
cooking in the cauldrons. I am glad that I am a part of this organisation that
feeds children who otherwise do not get to eat anything nutritious or wholesome
in one day. I hope I get the strength to come to this kitchen every day, no
matter what situation I am in or what virus hits society.
I will continue working for the betterment of children!

Rejuvenating health of children
Praveen
Kumar is a mid-day meal beneficiary who studies in 6th grade of
GHPS, Siddeshwaranagar, Dharwad, Karnataka. During the lockdown period, he
missed his school, teachers, friends and having mid-day meals (MDM). To support
the health, immunity, hygiene and education of such children, The Akshaya Patra
Foundation initiated The Happiness Kit Programme when the midday meal scheme was paused. Children like Praveen received food
essentials from this NGO in India that
would help them gain the required nutrition when schools were closed.
Praveen
is happy to be back to school and meet his friends and teachers. He is
particularly excited about enjoying the midday meals served in school.

The recipes used by Akshaya Patra contain different food groups
(Cereals, pulse, vegetables, spices, sugars and jaggery, oils, etc.) to ensure
that the nutrients are received by the beneficiary group.
The
recipes are standardized by calculating nutritive values by referring to the
book - Nutritive value of Indian foods by C Gopalan, BV Rama Sastri and SC
Balasubramanian-National institute of Nutrition ICMR Hyderabad) and recipes are
analysed in external NABL-accredited labs.
INNOVATIVE MENU DESIGNED AS
PER THE MIDDAY MEAL SCHEME
Akshaya
Patra has adopted innovative approaches to enhance the nutrient content of the
MDM menu and increase its consumption. One such approach is to add a third item
and introduce sweets and pickles in various locations. Another approach is to
make the existing items more palatable and interesting. These elements enhance
the taste and offset the menu fatigue that might set in children. The menu has
a variety of flavours, such as sweet, spicy, etc.
New
Product Development Centres (NPDC) have also been set up to make mid-day meals
more nutritious and interesting by developing new recipes and opting for
in-recipe modifications.
AKSHAYA PATRA SERVES HEALTHY SNACKS
These
snacks are a hit among children who receive locally palatable meals. They enjoy
these seasonal fruits that they can snack upon in the evening while they go
back home. Every meal is prepared in a hygienic manner with great caution.
The
Foundation has centralised and decentralised kitchens in 58 locations spread
across 13 states & 1 union territory of India. The kitchens are known for
their efficiency and efficacy. Every centralised kitchen is automated and can
cook close to 6,000 kg of rice, 4.5-5 tonnes of vegetables and 6,000 litres of
sambar in only 4 hours. To ensure that the waste generated in the kitchens are
discarded in a safe manner, the NGO in
India has set up anaerobic digestion plants to produce biogas. This biogas
is then used as cooking fuel for seasoning, etc.
AKSHAYA PATRA’S COOKING
PROCESS
After
meeting the FQMS process that includes Supplier Selection, Supplier
Qualification, Supplier Rating, etc., a set quantity of raw materials are
procured. The Quality Control process ensures that all the raw materials are
accepted only after a thorough Quality Inspection. The raw materials are
procured only if they meet all the Raw Material Specifications that are adapted
from Food Safety Standards Act 2006 (FSSA). To ensure that all the raw
materials are fresh, the kitchens follow the FIFO (First In First Out) and FEFO
(First Expiry First Out) methods. With this method, it can properly identify,
store and aptly retrieve the raw materials.

The operations of the kitchens
start early in the morning around 4-5 am.

The kitchen employees begin
cleaning all the pulses, rice and vegetables with water.
·
All the helpers begin cutting
vegetables and preparing for the meals. The vegetable cutting machines finely
chop other vegetables like potato and onion, while the vegetable peelers skin
out vegetables like potato, radish, carrots, etc.
·
Recipes are standardised
across the kitchens so that safety, hygiene and taste are not compromised.
The
vessels used in the cooking process are made of stainless steel of 304 food
grade. All the equipment used in the kitchen, including cauldrons, trolleys,
rice chutes, sambar and dal tanks, knives, etc. are made of SS-304 grade. This
